Scrambled Ch-Eggs

I wanted to create another "egg" alternative that didn't involve soy and was easy, tasty and packed with protein. 

The nutritional yeast helps to give this dish a nice cheesy flavor while adding a ton of important B vitamins. Whether you're vegan or experimenting with plant based meals, this recipe is a  M U S T! 

Ingredients

1 1/2 cups garbanzo beans, rinsed + drained
2 cups chopped spinach
1/2 cup chopped red pepper
2 1/2 tbsp nutritional yeast 
1tsp ground turmeric
1/4 tsp garlic powder
1/4 tsp onion powder
1/8 tsp salt (add to taste)

Directions

  1. Place garbanzo beans in a bowl after rising. Using a potato masher, mash beans into a fine consistency, no whole beans.
  2. Slice pepper in half (long-ways). Rinse and remove seeds.
  3.  Dice pepper into desired size then, chop spinach finely.
  4. Heat a non-stick frying pan. Then, mix in beans, pepper, spinach, nutritional yeast, all the seasonings, and 3 tbsp water. Cover and simmer on medium- low heat for 5 min or until pepper softens. Add additional 1-2 tbsp of water to cook and salt to taste.
  5. Serve and enjoy!
