Kate's Favorite Salad

This salad is simple yet incredibly filling and delicious. It's definitely my go-to dinner and can be easily altered to your liking! Feel free to add more veggies, sprouts and seeds to the salad to change it up a bit!

Ingredients:

Salad:

3 Cups chopped romaine
2 Cups spring mix
1 Cup chopped broccoli
1 Avocado
1 TBSP hemp seeds

Dressing:

2 TBSP raw tahini
2 TBSP balsamic vinegar
2 TBSP water
⅛ tsp garlic powder
 

Directions:

  1. Chop and prepare all salad ingredients and place into a large bowl
  2. Combine all dressing ingredients in a small jar or bowl and mix well until smooth and creamy.
  3. Pour dressing onto salad and enjoy! (Serves 1.)

  • I have never cared for salad, so I never ate it. Until I tried this recipe that is! I am obsessed, I eat this now at least once a week and actually look forward to it. Never in a million years would I think I would be a true salad convert. It’s all about that dressing!

  • Thanks for the recipe! It was delicious and definitely filling (split it with my husband and still was full). We are not vegan or vegetarian but I love finding delicious ways to get more fresh veggies in my family’s diet.
